Inside the Kitchen at Hudson Valley Brewery

If you're searching for Hudson Valley food worth traveling for, the answer might not be a restaurant at all- it might be a brewery. Here at Hudson Valley Brewery, located in the heart of Beacon, NY, our kitchen turns out some of the most talked-about bites in the area, all designed to pair perfectly with beer brewed just steps away.

Beacon has become one of the Hudson Valley's exciting food destinations, all here on our mile long Main Street. Our kitchen has quickly earned a reputation as one of the hot spots among Beacon restaurants; it’s the kind of place locals recommend before out-of-towners even think to ask.

Beyond the food, there’s many reasons to visit Beacon! It’s walkable, lowkey, and full of small, independent spots doing things well. We try to capture that spirit here at Hudson Valley Brewery, serving good food in a space built around great beer.

Meatballs, on a plate

Three dishes in particular keep people coming back:

The Hot Dog ($6): A Schaller & Weber beef and pork hot dog with house-made red onion sauce and yellow mustard on a potato bun. Simple and classic. Unbelievably good with a cold pint of our Pilsner in hand.

Meatballs & Sauce ($16): Beef and pork meatballs with Italian seasoning, Pecorino Romano, fresh parsley, and house-made red sauce. It's comfort food that will remind you of grandma’s meatballs, elevated just enough to feel special (and it's also available as a sandwich for $18).

Sourdough & Ricotta ($14): Toasted whole wheat sourdough from Bread Alone, served with herbed ricotta, lemon, and olive oil. Light, bright, and one of the best vegetarian options on the menu.

Beyond the headliners, our menu covers a lot of ground: marinated white beans, a black kale Caesar, an eggplant panini, a pressed salami sandwich, a turkey and cheddar, a grilled cheese, and for something a little more indulgent: a lobster salad roll with Honeycrisp apple and tarragon aioli. There are vegetarian and vegan options throughout, and gluten-free bread or crackers are available as well.

We’re happy to work with Bread Alone for our sourdough and baguettes. This organic bakery has been baking bread in the Hudson Valley for over 40 years, with a focus on local ingredients, slow fermentation, and environmental sustainability.

This Food Was Made to Pair With Beer

This is where Hudson Valley Brewery separates itself from typical Hudson Valley restaurants. Every dish on our menu is built with beer in mind, and the team is always happy to recommend a pairing based on what's currently pouring. A few pro moves to get you started:

Kale salad, marinated mushrooms, and olives

Kale salad, marinated mushrooms, and olives

  • Theta (Hazy IPA): Meatballs & Sauce. This one leans soft and juicy rather than bitter, so it just adds a bright, fruity lift to each bite.

  • Feel No Way (Pilsner): Our Hot Dog. A pilsner this clean and easy-drinking is the classic move, and its light bitterness keeps things refreshing between bites.

  • Enjoyer (Lager): Sourdough & Ricotta. A soft, honeyed lager rounds all of the rich flavors of this dish out.

  • Valley Beer (Sour Farmhouse Ale): Black Kale Caesar. The wine-like, orchard-fruit character of this barrel-aged Farmhouse Ale cuts through the anchovy dressing and plays nicely with the parmesan.

  • Say No More (Black Lager): Pressed Salami or Grilled Cheese. Dark, roasty, chocolate-forward beers are built for rich meat and melted cheese.

  • Peach Silhouette (Sour IPA): Lobster Salad Roll. The peach and bright acidity balance the richness of the lobster and aioli, while the hop character keeps it from feeling too sweet.

We're always brewing something new, and the Farmhouse and Sour programs rotate constantly! Ask your server what's pouring and they'll steer you toward the best match for whatever you're eating.
