Kinds of Light: Saperavi bottle

Come enjoy a bottle of our latest winemaking-inspired Sour Farmhouse Ale, Kinds of Light: Saperavi. Saperavi is one of the oldest cultivated grape varietals in the world. A native grape of Georgian origin, it dates back to the cradle of ancient winemaking: some people trace its roots back as far as 6000BC.

Last year, we were lucky enough to work with some of cultivars planted in the Finger Lakes in the early 1960s. We fermented that wine with skins for over 3 months before moving it to a neutral french oak puncheon to rest for a while - stay tuned for more on that lovely wine later. We soaked those skins in a few choice barrels of Valley Beer until the wine character was to our liking, then bottle conditioned it with local wildflower honey.

The result is a complex blend of high tannin, red fruit-forward wine and our signature Valley Beer notes of oak and honey. We taste grape jelly, cherry cordials, Halloween blood capsules, and pink peppercorns.Come enjoy a bottle of our latest winemaking-inspired Sour Farmhouse Ale, Kinds of Light: Saperavi.
