Valley Beer 2025
Once a year, we taste through each and every barrel of Sour Farmhouse Ale in our cellar. We have puncheons of beer from 2019 - rich with oak tannins, vanilla, and coconut - local wine barrels filled this year - fresh, bitter, and hoppy - and vintage blends from every year in between. This time in the cellar is a celebration of our Sour Farmhouse program, which from our first nomadic brews in 2015 has centered around sourcing local ingredients and fermenting our beer spontaneously in wood. While we're here, we'll open a few bottles of Valley Beer from years passed, reflect on how it's developing in the bottle, and dream on what it will become.
This time each year, as fruits are ripening and getting ready for harvest, we'll select a variety of barrels of different ages and beer from different batches to blend our Sour Farmhouse Ales and, from the cream of that crop, to create our annual blend of Valley Beer. As we've worked through the cellar, we've also been finishing up the labeling and waxing of last year's blend, which has continued its life in a bottle for the last year, developing in complexity and building natural carbonation.
Now, after quite a slow and patient journey, Valley Beer 2025 is ready to enjoy! We don't always think that each new year of Valley Beer is better than the last, but it feels pretty true this year. Valley Beer 2025 is lightly tart, richly aromatic, and bursting with stone fruit and honeycomb flavors. We taste freshly picked chamomile, dandelions, nectarines, and Lemon-Lime Sodas.
