Back in the Fall of 2022, our friends at Ci Siamo took the train up to Beacon to begin working on a project together.

We wanted to create a Botanical Pilsner inspired by their team’s work in the kitchen, behind the bar, and in the wine cellar — as well as reflect our shared values — of finding meaning and pleasure in friendships formed over food and wine, and sitting down together at One Long Beautiful Table!

Hopped with Hallertau Blanc and blended with a touch of direct-press Cabernet Rose wine, One Long Beautiful Table is conditioned on Mediterranean bay leaves and orange peel.

Botanical Sour Farmhouse Ale brewed exclusively with Hudson Valley sourced 6-row barley, red winter wheat, and tangerine marigold flowers from our garden; fermented in oak for 18 months and bottle conditioned with wildflower honey.
