Glisten
Glisten, our Sour Farmhouse Ale with cherries, is back! This batch, blended and bottled last summer, was made with fresh picked Montmorency sweet cherries from Fix Farms in Hudson, NY.
The cherries were super ripe and went straight into a stainless steel tank: whole fruit, stems, pits and all. After a few days in the tank, the whole cherries begin their own fermentation inside then fruit, a process called carbonic maceration. It’s a winemaking technique known to produce fruit-forward red wines, and when we pull it off right with fruits like cherries, the result is amazing. Once this cherry wine finishes most of its fermentation, we blend in some of our favorite Valley Beer barrels and let the two really get to know each other in the tank. The extra conditioning time with cherry skins and pits continues to add complexity to the beer and contributes a deep baking spice and pie crust aroma and flavor.
Glisten bursts with a bright cherry pop and follows with subtle vanilla, cinnamon, and nutmeg character. We think of firecracker ice pops, puff pastry, and Ssips juice boxes when we drink it. Come grab a bottle and enjoy it as the summer winds down.
