2024 Cellar Bottles

The start of the year is marked by our annual cellar sale, during which we share a selection of farmhouse bottles we kept to age for a few years longer. This moment serves as an opportunity to reflect on the years gone by, with each bottle marking a moment in our history. From our Valley Beer blends to farmhouse beers aged on fruit, each bottle tells a distinct story from when it is brewed and blended to when it is opened and enjoyed.

Farmhouse barrels

For over five years, we have utilized what we call “The Nest” as our farmhouse production space, accommodating more than 250 oak barrels, including our foudres that house our mixed culture—the very foundation to farmhouse fermentation. Some beers undergo a six-month maturation in oak, while others patiently age for up to two years. The offerings from our vintage collection span this entire spectrum, each with a unique character distinct from the others.


Valley Beer Vintage 2019 | 6%

A cuvée blend of all four seasons of Valley Beer 2019. A portion of each seasonal release was returned to oak to mature for another year before it was blended and bottled. Released in March 2021.


Peregrine (2023) | 5%

Sour Farmhouse Ale conditioned on peaches, aged in oak for 8 months, and conditioned on local wildflower honey. Released March 2023.


Kinds of Light: Merlot | 6%

Sour Farmhouse Ale brewed with 100% Hudson Valley grown barley and wheat, re-fermented with Merlot grape skins grown and harvested in the Finger Lakes region of New York, and aged in oak for one year. Released September 2021.


Valley Beer Winter 2018 | 5%

Sour Farmhouse Ale brewed with 100% New York ingredients, spontaneously fermented in our foudres with wild yeast and souring bacteria, and aged for one year in oak wine barrels. Released October 2019.


Coeval II | 8%

Sour Farmhouse Ale made in collaboration with Foam Brewers. Brewed with a mix of cereal grain from the Hudson Valley - barley, wheat, oat, einkorn, spelt & corn - and raw honey from New York and Vermont; open fermented with a mixed culture of wild yeast from both of our breweries, and aged in freshly emptied gin barrels for nearly a year. Released January 2021.


Levain | 5%

Mixed grain Sour Farmhouse Ale brewed with day old bread and a variety of whole grains from Bread Alone Bakery in Kingston, NY. It was co-fermented with their sourdough yeast and our house mixed culture, then aged in oak for 6 months. Released October 2019.
