Kinds Of Light : Cabernet Sauvignon
In October of 2021, we took a trip out to the North Fork of Long Island to pick up two tons of Cabernet grapes from Hounds Tree Vineyards. We've been working with grapes for a long time, but that summer we jumped head first into the wild world of natural wine. We crushed the grapes at our wild facility, let them ferment on skins for nearly 2 months, pressed the wine into empty Valley Beer barrels, and let it rest. We felt like winemakers. Nearly two years later, we're waiting for the first bottles of our winery project, Lantern Wines, to come to life.
A lot of our passion for winemaking comes from our long running series, Kinds of Light. Our first batch refermented on skins that we scooped out of a local winery's compost pile, and with each batch, we've been thrilled by the way our Valley Beer and grape skins come together. This batch is extra special to us because we have seen it all the way through: from grape harvest to pressing, from wild beer fermentation to skin maceration. And while we quietly wait for our wine to mature, we're excited to share Kinds of Light: Cabernet Sauvignon with you all!

Sour Farmhouse Ale refermented with spent Cabernet grape skins from our upcoming wine project: Lantern Wines. It was brewed with 100% locally grown barley and raw wheat, and spontaneously fermented in our foudres. This batch of Kinds of Light was aged for over a year in oak and bottle conditioned with local wildflower honey.
Tastes like: watermelon Jolly Ranchers, chillable reds, Raspberry Crystal Light.
