Introducing Solis: A wild-fermented oak aged cider produced in collaboration with our friends at Shacksbury, made with a blend of foraged heirloom apples.

Solis, much like our Coterie series, is an exploration of wild-fermented cider. What makes it special is the use of foraged apples, and a departure from typical cider apple varieties. We were drawn to Shacksbury's commitment to resurrecting these forgotten apples, and through our collaboration, we explore the legacy of cider tradition while embracing innovation.

SOLIS | 7%

Wild-fermented cider produced in collaboration with our friends at Shacksbury Cider. Made with foraged apples from their Lost Apple Project, it was fermented with native yeasts and aged in neutral oak barrels for 18 months, and bottle conditioned with local wildflower honey.

Tastes like: candy apple, chardonnay grapes, brie cheese rind, Georgian orange wine.
