Hush

 

Every time we blend from our barrels, it’s a little bit of a surprise. The beer inside has been aging for so long, it’s hard to know what to expect when we pull a nail.

With over 200 barrels in our cellar, we spend a lot of time tasting through samples, and we've come to love the taste of oak-aged beer as it comes out of the barrel. While carbonation often brings fruit flavors and acidity to the forefront, drinking these beers still and at cellar temperatures, highlights rounder flavors like coconut, vanilla, and toffee from long-term aging in oak.

Hush, our latest bottle release is a Sour Farmhouse Ale brewed with local barley and raw red wheat, and aged in oak wine barrels for one year. Hush is bottled still and matured in the bottle for an additional 8 months.
