This Saturday we will be releasing batch two of Demiurge, our collaboration with the unparalleled NYC cocktail bar, Death & Company.

Demiurge is inspired by the classic Mai Tai cocktail, a deeply refreshing blend of light & dark rums, orange liqueur, lime juice, and orgeat. To recreate these complex flavors in Demiurge we brewed an extra thick Sour Double IPA with wheat & malted oat, adding milk sugar & blackstrap molasses in the whirlpool, pineapple and lime puree during fermentation, and almonds during the cold conditioning phase.

Years before we opened our brewery, we would frequently take the trip down to NYC to visit Death & Company, putting our name on the often very long waiting list, then heading a few blocks over to Proletariat, where we would drink Sour Ales and Lager Beer while we waited for their call. It was during those years that we first began to develop the brewing techniques we now use at Hudson Valley Brewery, which are very much inspired by the principals of classic & modern mixology -- balancing sweetness and acidity, blending base spirits and using modifying ingredients, to create new & sometimes unusual flavors.

We are very excited to share this new batch of Demiurge with you all, which will be available at the brewery this Saturday at Noon, and exclusively at Death & Company in the coming weeks.
