Terrarium, our collaboration with Third Kingdom

Overthrow Hospitality has proven to have a knack for creating genre-defining bars and restaurants over the years — with Proletariat, Amor Y Amargo, and Soda Club, to name a few.

At Third Kingdom, they’re focusing on mushrooms as the main ingredient, and with their 1st anniversary approaching, they wanted to make a beer for the occasion.

Terrarium is a Farmhouse Lager brewed with organic Lion's Mane, Shiitake, and Oyster mushrooms grown at Sugarshack Farms in New Paltz, NY. Hopped with Hallertau blanc, and can-conditioned for 3 months — this beer expresses subtle umami and wine-like characteristics from the mushrooms while remaining clean and refreshing as Lager should be.

Terrarium might be one of the wildest beers we've made so far, even though it drinks like crispy little lager. The Terrarium journey started last fall when we macerated a collection of organic, local mushrooms in hot water and fresh, spontaneously fermented Valley Beer. A quick bloom of hot water—much like steeping a deep, earthy mushroom tea—filled the brewery with umami-rich, forest floor aromas and once the mushrooms cooled off a bit, we let them ferment with Valley Beer for a few weeks. This Valley Beer broth was the base for Terrarium, which we blended a healthy dose of fresh Feel No Way Pilsner. When we felt like we got the blend just right - a real tight rope walk balance of acidity, savoriness, and drinkability - we let the flavors marry up before the beer was can conditioned. The final product was a bit of a surprise: more than the sum of its parts, and unique in so many ways.
