Baies Rose: A collaboration with Chef Daniel Boulud
We are pleased to present Baies Rose, a collaboration with the legendary Chef Daniel Boulud. Baies Rose is a Botanical Pilsner available exclusively at Hudson Valley Brewery and Chef Daniel’s Michelin-starred restaurant Le Pavillon – located in the grand ‘One Vanderbilt’ skyscraper on the corner of 42nd Street & Vanderbilt Avenue, directly across from Grand Central Terminal.
Our goal for this project was to translate the prodigious creativity and passion of Chef Daniel’s cuisine through the lens of our brewing process at Hudson Valley Brewery.
We started off with a Pilsner hopped with Strisselspalt – a variety hailing from the Alsace region in France known for its delicate floral and minty bouquet. Next, we added French Tarragon to compliment the hops, along with lemon zest to provide a bright and uplifting counterpoint to the herbal character of the base beer.
We then selected Pink Peppercorn as the central and focusing ingredient, for which the beer is named after – Baies Rose meaning ‘pink berries’ in French. Finally, we cold-steeped the beer on hibiscus flowers to impart a soft pink rose color and contribute the subtle flavor and aroma of sweet red fruit.
