The Grip Series

 

The Grip Series is one of our latest co-fermentation adventures! It is an ongoing series of Sour Farmhouse Wine Blends featuring a rotating varietal of NYS-grown wine. Each is fermented and vinified at our sour facility, aged in oak for up to a year, and blended with some of our favorite sour farmhouse barrels.

Grip: Seyval Blanc and Grip: Frontenac were both grown and harvested in the Hudson Valley in 2019. We crushed the grapes and fermented the wine on skins for nearly a month with our house culture of yeast and bacteria, and without any addition of sulfites.

We punched down the fermenting grapes throughout primary fermentation, allowing for more color and more flavor in the finished product. We pressed off the juice with our tiny, hand-crank press, and filled freshly emptied Valley Beer barrels for a long maturation. When the wine was ready, we blended it with some of our best NYS sour farmhouse ale and let it condition in the bottle for 6 months.

Grip: Seyval Blanc

Grip: Seyval Blanc has a spritzy, champagne-like carbonation that carries the zesty, pithy refreshing notes of the wine. It tastes like grapefruit pith, Cava Brut, orange blossom water, and white gummy bears.

Grip: Frontenac

Grip: Frontenac was bottled close to still to feature the dark fruit flavors of the grapes. It tastes like Dr. Brown’s Black Cherry Soda, baking spices, and a summer picnic charcuterie board.
